Have fresh bread with supper using this recipe for quick and easy rolls baked in a cast iron skillet.
1/2 Cup Warm water (100-110 degrees)
1 Pkg yeast
2 tsp Sugar
3 Cups Bread Flour1 Pkg yeast
2 tsp Sugar
1 tsp Salt
2 tsp Baking Powder
1/2 tsp Baking Soda
1 Cup Buttermilk
3 Tbsp Vegetable Oil
In a small bowl, sprinkle yeast and sugar over warm water, stir, set aside to let proof.
In a large bowl, add the dry ingredients and stir to combine.
Then add the milk, oil, and yeast mixture, stir to form a stiff dough, add a little more flour if needed.
Dump dough out onto a lightly floured surface, knead for approx. 5 minutes.
Roll out dough to fit the bottom of a 10 inch Cast Iron Skillet
.
Place dough in a well greased skillet.
Use a metal spatula
Cover and let rise for 1 hour.
Bake, uncovered, for 12 minutes at 425 degrees.

Oh my these look good!! They sound perfect with a big bowl of beef stew!
Didn't work for me. Didn't raise much and then when I took it out of the oven after 12 minutes, it wasn't done, so I had to put it back in for another 10 minutes or so. Are you sure 12 minutes is correct, or is it a typo or am I just too stupid to live? :)
I put it in more of a dutch oven, and cooked with the lid off as I didn't have a clean skillet and I was too lazy to wash one. ;)
I made these yesterday and the guys loved them! Ate them right up and I had to make them more for biscuits and gravy the next morning! Thanks so much for posting it! Brandie

Hmm...I'm not sure what happened there, sorry it didn't work out for you. 12 minutes is right (plus or minus a few minutes depending on your oven). The only thing I can think is if it was cold and it just needed more raising time before baking. I don't imagine a dutch oven would make much of a difference but I haven't tried it that way. But I suppose it could legthen the baking time since the high walls would be blocking the circulation of warm air to the bread for that initial rise when it hits the hot oven. Did you substitute any ingredients?
BTW, I think we'll be able to make it up to the tower so we hope to see you there :)
